VINEYARD LOCATION: Fondo Cereolo di Sopra and Monte Tenda. The average altitude of the parcels ranges from 160 to 250 m a.s.l.
DISTILLATION: after collecting the marc used to produce Amarone, it is lightly pressed. The marc is then immediately distilled via the discontinuous method at low pressure.
TASTING NOTES: distilling at low pressure, via the discontinuous method, preserves the aromas and the fragrances of the original grapes, yielding a grappa with a persistence that recalls blackberries and a finish reminiscent of almonds.
